Sweet Maine Baby Shrimp
boiled and cooled
Mayo
mixed
Soy Sauce
Lemon

Cut a triangle of skin out of each pepper and remove ribs and seeds.
Broil the peppers or char them on a gas burner until the skin blisters.
Once blistered remove to a paper bag to cool for 5-10 minutes.
Boil baby shrimp for 30 seconds.
Immediately strain and cool shrimp.
Once peppers are cooled, peel the skin off.
Mix mayo and shrimp.
Stuff the shrimp mixture into each pepper.
Add a dash of soy sauce to each pepper (or serve on the side).
Serve with a lemon wedge and enjoy immediately.
