Preheat oven broiler.
Toast French bread slices and spread with butter.
Break toasted bread into large pieces.
Place bread pieces in the bottom of individual bowls.
Carefully crack a whole, uncooked egg into each bowl on top of the bread.
In a saucepan, dissolve chicken bouillon cubes in 4 cups of boiling water.
Immediately pour the boiling bouillon mixture over the egg and bread in each bowl.
Sprinkle generously with grated Parmesan cheese to taste.
Place a slice of Swiss cheese on top of each bowl.
Place the bowls in the oven under the broiler until the Swiss cheese begins to melt and is bubbly.
Garnish with fresh parsley or coriander (or both) before serving.
Serve immediately in earthenware bowls (optional).
