Mince the garlic and chop the onion.
Cut the pork and cooked chicken into small thin slices.
Cut the carrots into small thin slices.
Chop the cabbage.
Chop the celery leaves finely.
Soak the pancit bihon in water for about 10 minutes.
In a large pot, saute the garlic and onion until fragrant.
Add the pork and chicken and cook for 5 minutes.
Add the chicken cube or salt and water, then simmer for 10 minutes.
Add the carrots, peapods (if using), cabbage, and celery leaves, then simmer for a few minutes until vegetables are tender-crisp.
Remove all the ingredients from the pot except the liquid and set aside.
Add the soy sauce to the liquid in the pot and mix well.
Add the soaked pancit bihon to the pot and mix well.
Cook until the liquid evaporates completely, stirring frequently to prevent sticking.
Add the cooked vegetables and meat back to the pot and simmer for 5 minutes, stirring constantly.
Serve hot.
