fine dry breadcrumbs
plain almond milk
ground beef
sweet Italian sausage
casing removed, finely chopped
eggs
lightly beaten
garlic
minced and mashed
ketchup
soy sauce
dried oregano
crumbled
garlic powder
freshly ground pepper
to taste
salt
to taste
Combine gelatin and cold water in a small bowl and let thicken for several minutes.
Combine breadcrumbs and almond milk in another small bowl.
In a large bowl, mix ground beef, sweet Italian sausage, gelatin mixture, and breadcrumb mixture.
Add eggs, garlic, ketchup, soy sauce, oregano, garlic powder, salt, and pepper to the meat mixture and blend well with your hands.
Preheat oven to 350°F (175°C).
Oil a baking dish.
Dampen or grease hands and form 1 1/2 - 2 inch meatballs.
Arrange meatballs in the baking dish.
Pour 1/4 inch of water around meatballs, scatter sliced onions (optional), sprinkle with lemon juice (optional).
Cover the dish with foil and bake for 30 minutes.
Uncover and bake for the last 10-15 minutes to brown the tops.
Serve as an appetizer or main dish.
