Whisk together dry ingredients in a large bowl.
Preheat the Æbleskiver pan on the stovetop.
Separate eggs, placing whites and yolks into separate bowls.
Beat egg whites until they hold a 2-inch peak. Do not overbeat.
Beat egg yolks with melted butter and buttermilk.
Gently add the yolk mixture to the dry ingredients, mixing with a rubber spatula until just combined.
Fold in the beaten egg whites gently.
If batter is too thick, add a splash more buttermilk.
Grease the hot Æbleskiver pan.
Fill each hollow 1/2 to 2/3 full with batter.
Add a chunk of spiced apple to the center of each ball (optional).
Cook until the bottom is firm and golden brown.
Use a skewer or spoon to turn the balls a quarter turn.
Continue turning until cooked through and a skewer comes out clean.
Let cooked Æbleskiver rest in a 200 degree oven if not serving immediately.
Clean the cooled pan gently with a brush and hot water. Avoid soap.
Towel dry and lightly oil the cups.
