Mince garlic, onion, parsley, and bread in a food processor until finely mixed.
In a mixing bowl, beat egg (or egg whites).
Add ground turkey, the processed mixture, salt, pepper, and 1/4 cup tomato sauce and 1 tbsp Parmesan cheese to the bowl.

Place the loaf in the pan and cover with plastic wrap.
Refrigerate for at least 30 minutes or overnight for easier slicing.

Pour the remaining tomato sauce over the top of the loaf.
Sprinkle with oregano and the remaining 2 tablespoons of Parmesan cheese.
Bake for another 30 minutes.
Let the meatloaf stand for 10 minutes before slicing and serving.
