Crumble tofu into a bowl.
Add eggs, cheddar cheese, parmesan cheese, and nutmeg to the tofu.
Mix all ingredients until well blended.
Pour a thin layer of tomato sauce into the bottom of a 9x13 inch baking pan.
Stuff each uncooked manicotti shell with the tofu mixture.
Place the stuffed manicotti shells in a single layer in the baking pan.
Continue stuffing and arranging manicotti until all shells are filled.
If there is any extra tofu mixture, crumble it over the top of the manicotti.
Pour the remaining tomato sauce over the manicotti shells.
If using regular manicotti, add one can of water to the sauce.
If using oven-ready manicotti, do not add extra water.
Cover the pan with foil and bake in a preheated 350 degree oven for 45 minutes.
Remove the foil and bake for another 15 minutes, or until golden brown and bubbly.
