Prepare the crust by mixing butter, flour, and sour cream (or yogurt) together by hand to make a smooth dough.
Keep the crust in the refrigerator while preparing the filling.
Preheat oven to 350°F (175°C) and butter a 9x13 inch pan.
If using green onion, cook it in butter or margarine over low heat until softened but not completely cooked.
Let the sautéed green onion cool.
Cook the spinach, covered, over low heat for about 5 minutes, then strain well and squeeze out excess water.
In a large bowl, mix together the cooked spinach, feta cheese, romano cheese, edam cheese (or other hard cheese), sour cream, eggs, and cooled sautéed green onions.
Taste the filling and add salt and pepper to taste.
Remove the crust from the refrigerator.
Press 2/3 of the dough into the prepared pan.
Pour the prepared filling on top of the dough.
Roll the remaining dough between your palms into strips and lay over the filling in a lattice pattern.
Sprinkle the pie with Parmesan cheese and sesame seeds.
Bake for approximately 35-40 minutes in the preheated oven until golden brown.
