Wash the sweet potato and cut it into 1/2 inch batons or fries.
Soak the fries in cold water for 1-12 hours.
Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
Rinse the fries thoroughly in cold water and dry them completely with paper towels.
In a small bowl, whisk together the cornstarch, salt, cumin, chili powder, smoked paprika, and cayenne pepper.
In another bowl, whisk the egg white until very frothy.
Toss the fries with half of the spice and cornstarch mixture.
Pour the egg white over the fries and toss again to coat.
Add the remaining spice and cornstarch mixture and mix well.
Place the fries on the parchment paper in a single layer.
Bake for 20 minutes, turning the fries and rotating the pan halfway through. Open oven every five minutes to release moisture.
Serve with chipotle mayo, mayo with sriracha, cilantro and lime aoli, or BBQ sauce.
