Prepare ingredients: Chop onion and tomatoes, grate garlic, slit green chilies, and boil soy chunks.
Boil soy chunks: Heat water in a saucepan, add soy chunks, and boil for 5 minutes until soft. Drain the water and set aside.
Prepare masala: Heat oil in a pan. Add cumin seeds, curry leaves, and green chilies. Sauté for a few seconds.
Sauté aromatics: Add onions, ginger, and garlic. Sauté until onions are translucent.
Add tomatoes: Add sliced tomatoes and sauté until softened.
Add spice powders: Add coriander powder, red chili powder, and turmeric powder. Mix well and cook for 30 seconds.
Sauté soy chunks: Add soya chunks and sauté in the masala for 2-3 minutes.
Add coconut milk: Add coconut milk and water, salt, and curry powder. Mix well.
Simmer: Simmer the Soy Chunks Masala for about 5 minutes until the gravy thickens.
Adjust seasoning: Check the salt and spice levels and adjust to suit your taste.
Serve: Transfer to a serving bowl, garnish with coriander leaves, and serve hot.
