Soybeans

or maple syrup or vanilla

Soak soybeans in water for 8 hours or overnight.
Combine soaked soybeans, 4 cups boiling water, and baking soda in a pot.
Blanch for 5 minutes and rinse thoroughly.
Add 1 cup of hot water to the rinsed beans and process in a food processor or blender until smooth.
Boil the remaining 7 cups of water in a pot.
Add the processed beans and sugar/maple syrup/vanilla (if using) to the boiling water.
Simmer for 20 minutes, stirring occasionally and removing any film that forms on top.
Strain the mixture through a cheesecloth to remove bean particles.
Cool before serving. Serve hot or cold.
Store leftovers in the refrigerator for up to a week.
Okara (bean residue) can be frozen or used in other recipes.
