shredded reduced fat colby-monterey jack cheese

Spray a 12-inch nonstick skillet with cooking spray and heat over medium-high heat.
Add undrained Ro*Tel® Original Diced Tomatoes & Green Chilies and frozen O'Brien potatoes with onions and peppers to the skillet.
Cook for 6 to 8 minutes, or until the potatoes are tender and the liquid has evaporated, stirring occasionally.
Remove the potato mixture from the skillet.
Add Pure Wesson® Vegetable Oil to the skillet and reduce the heat to medium-low.
Pour Egg Beaters® Original into the skillet and cook for 30 seconds.
Spoon the potato mixture evenly over the Egg Beaters®.
Cook for 7 minutes, or until set, running a flexible spatula around the edge of the skillet to keep the frittata loosened.
Sprinkle the shredded reduced fat colby-monterey jack cheese over the frittata.
Cut into 4 wedges to serve.
