Preheat oven to 350°F.
Cook pasta shells according to package directions.
In a large skillet, cook sausage, onion, red pepper, and garlic over MEDIUM-HIGH heat for 8-10 minutes, stirring frequently, until sausage is thoroughly cooked.
Drain excess grease from the skillet.
In a large bowl, combine cooked sausage mixture, ricotta cheese, 3/4 cup mozzarella cheese, 1/3 cup Parmesan cheese, egg, parsley, and oregano.
Mix well to combine all ingredients.
Stuff each cooked pasta shell with the sausage mixture.
Pour spaghetti sauce into the bottom of a baking dish.
Arrange the stuffed shells in the baking dish on top of the sauce.
Sprinkle the remaining 1/4 cup mozzarella cheese over the shells.
Bake in the preheated oven for 30-40 minutes, or until cheese is melted and bubbly and the shells are heated through.
Let cool slightly before serving.
