kumara (sweet potato)
coarsely chopped
vegetable oil
salt
to taste
pepper
to taste
pork forequarter chops
vermicelli rice noodles
lebanese cucumber
thinly sliced
coriander leaves
mint
shredded
lemon juice
sweet chili sauce
fish sauce
lemon wedge
to serve
Preheat oven to 190C (170C fan forced).
Line a baking tray with baking paper.
Toss kumara with half the vegetable oil and salt and pepper.
Place kumara on the prepared tray and bake for 20 minutes or until tender.
Brush pork with remaining oil.
Heat a medium frying pan over moderate heat.
Add pork and cook for 3 to 4 minutes each side or until browned and cooked through.
Transfer pork to a heatproof plate and cover with foil.
Rest pork for 5 minutes.
Remove and discard the fat and bones from pork.
Slice pork thinly.
Cook noodles in a medium saucepan of boiling water for 3 minutes or until tender.
Drain and rinse noodles under hot water.
Drain noodles again and place in a large bowl.
Add kumara, pork, cucumber, coriander and mint to the noodles.
Whisk lemon juice, chili sauce and fish sauce in a jug.
Pour sauce over pork mixture.
Toss salad to combine.
Serve salad with lemon wedges.
