Barley (seeds)
soaked for 5-6 hours
Extra Virgin Olive Oil
Onion
finely chopped
Garlic
finely chopped
Celery
finely chopped
Carrot (Gajjar)
diced small
Potato (Aloo)
peeled and diced small
Button mushrooms
quartered
Bay leaf (tej patta)
Vegetable stock
Parsley leaves
for garnishing
Whole Black Peppercorns
coarsely grounded
Salt
to taste
Red Chilli powder
to taste
Soak barley for 5-6 hours.
Prepare all ingredients: chop onion, garlic, celery, dice carrot and potato, quarter mushrooms.
Heat oil in a pressure cooker over medium heat.
Sauté onions, garlic, and celery until tender.
Add remaining ingredients (except parsley) and stir well.
Season with salt and red chili powder to taste.
Cover the pressure cooker and cook for 3-4 whistles.
Reduce heat to low and simmer for 5-10 minutes.
Turn off the heat and allow pressure to release naturally.
Open the cooker and check if the barley is cooked through.
Adjust seasoning if needed.
Stir in parsley.
Serve hot.
