Mix the dry ingredients well.
Add egg whites, olive oil, and vanilla extract to the dry ingredients.
Add grated pumpkin, spice powders, jaggery, and milk.
Mix until a thick batter forms.
Pour the batter into the prepared loaf pan.
Spread the batter evenly in the pan.
Bake in the preheated oven for 45 minutes.
Insert a knife to check for doneness; if it comes out clean, the bread is cooked.
