Brown 1 1/2 lb ground chuck and drain excess fat.
Mix in 1 package of taco seasoning with the browned ground chuck.
In a separate bowl, combine 1 can of cream of chicken soup, 1 can of Ro-Tel tomatoes, and 2 cups of sour cream.
Gently crush 1/2 bag of tortilla chips and spread them evenly in the bottom of a 9 x 13 inch baking dish.
Pour the ground chuck and taco seasoning mixture over the crushed tortilla chips.
Spread the cream of chicken soup, Ro-Tel tomatoes, and sour cream mixture evenly over the ground chuck.
Top with shredded Cheddar cheese to your preference.
Cover the baking dish with foil.
Bake in a preheated oven at 350°F (175°C) for 30 to 35 minutes.
Let cool for 10 minutes before serving.
