Preheat oven to 400°F (200°C).
Line a baking pan with foil and spray with Pam.
Halve the plum tomatoes lengthwise and place them cut side up on the prepared pan.
In a small bowl, mix 1/4 cup of olive oil, minced garlic, Italian seasoning, crushed red pepper flakes, salt, and pepper.
Spoon the olive oil mixture over the tomatoes.
Drizzle the tomatoes with 2 tablespoons of remaining olive oil.
Roast in the preheated oven for 45-60 minutes, or until the tomatoes are soft and browned on top.
Prepare pasta according to package directions. Drain well.
In a bowl, place half of the roasted tomatoes with the remaining 2 tablespoons of olive oil and mash coarsely.
Add the cooked pasta and the remaining roasted tomatoes to the bowl.
Toss to mix well.
Sprinkle with parmesan cheese and additional crushed pepper if desired.
