Cook the egg noodles in boiling salted water until just under al dente. Drain and set aside to cool.
In a skillet over medium heat, saute the onions in olive oil and 2 tablespoons of butter until translucent and beginning to brown.
Add the apples to the skillet and saute for 3-5 minutes.
Remove the skillet from the heat and set aside.
In a large mixing bowl, combine the chicken broth, eggs, and the remaining butter.
Mix until well combined.
Add the cooked egg noodles to the bowl, ensuring they are fully coated with the egg mixture.
Add the sauteed onions and apples to the bowl and mix well.
Add the cayenne pepper, salt, and pepper to the bowl and mix generously.
Add most of the goat cheese to the bowl and stir to combine.
Transfer the mixture to a greased or buttered 2 3/4 - 3 quart baking dish.
Bake the kugel covered for 30 minutes.
Remove the kugel from the oven and add the remaining goat cheese to the top.
Bake the kugel uncovered for another 30 minutes, or until it is set and the goat cheese on top is beginning to brown.
Let the kugel sit for 10 minutes before serving.
