Brinjal (Baingan / Eggplant)
roasted, peeled, mashed
Hung Curd (Greek Yogurt)
Coriander (Dhania) Leaves

White Urad Dal (Split)
Chana dal (Bengal Gram Dal)
Asafoetida (hing)
Dry Red Chilli
Curry leaves
Poke the eggplant on all sides.
Roast the eggplant directly on a stove or on a griddle, turning evenly and adding a tablespoon of oil.
Roast until the eggplant becomes soft and the skin starts to peel off.
Remove the eggplant and let it rest for a couple of minutes.
Peel off the skin and chop the flesh, then mash it coarsely.
Mix the mashed eggplant with hung curd, chopped green chili, and salt. Adjust consistency with water if needed.
Heat oil in a kadai.
Add mustard seeds, urad dal, chana dal, hing, and dry red chili to the hot oil.
Crackle the curry leaves in the oil.
Pour the tempered spices over the eggplant and yogurt mixture (Gojju).
Serve the Karnataka Style Badnekayi Mosaru Gojju.
