Peel the pineapple and remove the eyes.
Slice the pineapple into rings.
Cut each ring into approximately 1 1/2 inch chunks.
Finely chop the garlic and cilantro.
Finely chop the scotch bonnet pepper.
Combine the pineapple chunks, garlic, cilantro, half of the lime juice, half of the chopped hot pepper, salt, and black pepper in a bowl.
Stir to mix thoroughly.
Taste and adjust the seasoning, adding more lime juice, hot pepper, and/or salt as needed.
Let the chow sit for at least 20 minutes to allow the flavors to meld.
