Preheat a large, heavy bottomed pan over medium-high heat.
Add 1 tablespoon coconut oil to the pan.
Saute diced onion with a pinch of salt until translucent, about 3-5 minutes.
Add chopped seitan to the pan.
Cook seitan for about 10 minutes, until nicely browned, stirring often.
Push seitan and onions to one side of the pan.
Add the remaining 1 teaspoon of coconut oil to the pan.
Add minced garlic and ginger to the pan and stir as it sizzles for about 15 seconds.
Mix the garlic and ginger with the seitan and onions.
Add thyme, paprika, salt, allspice, red pepper flakes, cinnamon, and black pepper to the pan.
Toss to coat everything and cook the spices a bit.
Add the crushed tomatoes to the pan.
Cook for about 10 more minutes, tossing often.
Mix in the maple syrup, lime juice, and mustard.
Let cook for a minute or so, then taste and adjust salt and seasonings as needed.
Serve on your choice of buns or bread.
