Preheat a grill to medium-high heat (350°F). Spray grill rack with nonstick cooking spray.
Combine ground chuck, Worcestershire sauce, and House Seasoning in a bowl and mix well.
Form the mixture into 4 patties.
Grill burgers, covered, for 5-6 minutes per side to desired doneness.
Pour vegetable oil (1/4 inch depth) and bacon renderings into a nonstick skillet and heat over medium heat.
Sprinkle tomato slices with salt.
Soak tomato slices in buttermilk.
Combine cornmeal, flour, and House Seasoning in a small bowl.
Dip both sides of each tomato slice in the flour mixture.
Add tomatoes to the hot oil and cook until golden brown, 3-4 minutes per side.
Place a slice of pepperjack cheese over each grilled patty.
Place 2 bacon slices on the bottom half of each toasted onion roll.
Top with the cheeseburger, a fried green tomato slice, and Spicy Thousand Island Dressing.
Cover with the onion roll tops.
Serve immediately.
For the Spicy Thousand Island Dressing: Mix mayonnaise, ketchup, dill relish, House Seasoning, hot sauce, crushed egg, lemon zest, and lemon juice in a medium bowl.
