Chop the onion, bell pepper, garlic, and coriander.
Heat vegetable oil in a pan over medium heat.
Sauté the onion and bell pepper for about 3 minutes until softened.

Pour in the cooked black beans and bean stock (or chicken stock). Bring to a simmer.
Stir in the cooked white rice gently, being careful not to mash the beans.

Just before serving, stir in the chopped fresh coriander.
