Heat oil in a non-stick pan over medium heat.
Add chopped onion to the pan.
Stir-fry the onion until it becomes transparent, about 5 to 7 minutes.
Add chopped cauliflower to the pan.
Stir-fry the cauliflower for 4 minutes.
Add coriander powder, cumin powder, garam masala, and red chili powder to the pan.
Mix all the spices with the cauliflower and onion.
Mix in the grated Maggi vegetable stock cube powder.
Add a few tablespoons of water to the pan.
Cook the cauliflower until the mixture is dry and the cauliflower is tender.
Remove the pan from the heat.
Add chopped coriander leaves, mint leaves, and grated cheddar cheese to the mixture.
Mix everything well until the cheese is melted and evenly distributed.
Transfer the filling to a plate and let it cool slightly.
Divide the filling into two equal portions.
Place each portion between two slices of white bread.
Toast the sandwiches in a sandwich toaster until golden brown and heated through.
