Preheat oven to 375 degrees F.
Season chicken breasts with cumin, garlic powder, salt, and pepper.
Cook chicken in a large skillet with olive oil until almost cooked through, about 5-7 minutes per side.
Let the chicken rest.
Shred the cooked chicken.
In the same skillet, saute onion, celery, jalapeno pepper, and garlic with salt, pepper, cumin, oregano, and chili powder until softened.
Add Rotel and chicken stock to the skillet, stirring to deglaze the pan.
Transfer the sauteed vegetables and liquid to a large bowl.
Add Cheez Whiz, cream cheese, cream of mushroom soup, shredded chicken, and any accumulated juices to the bowl.
Mix all ingredients thoroughly.
Spray a 9x13 inch baking dish with cooking oil spray.
Reserve a handful of crushed Doritos for topping.
Spread half of the remaining crushed Doritos in the baking dish.
Cover the Doritos with half of the chicken mixture.
Repeat layers with the remaining Doritos and chicken mixture.
Sprinkle the reserved crushed Doritos and cheddar cheese on top of the casserole.
Bake for 25 minutes, or until golden brown and bubbly.
Remove from oven and let rest for 10 minutes before serving.
Serve with your favorite toppings such as sour cream, lettuce, and tomato.
