Steam the cauliflower and beans with a little salt until they are just about soft; avoid overcooking.
Heat sesame oil in a heavy-bottomed pan over medium heat.
Add mustard seeds and urad dal; allow them to crackle and the dal to brown until golden.
Stir in curry leaves, chili powder, and turmeric powder.
Add the steamed cauliflower and beans to the pan.
Toss well to combine all ingredients.
Saute for a few more minutes, then check the salt and spices and adjust as needed.
