Heat oil in a skillet on medium flame.
Add the garlic and saute until it turns into a deep brown color (2-3 minutes).
Add ginger and onions and cook for another 2 minutes.
Add mushrooms, green chilli, carrots, vinegar, and soy sauce and mix well.
Cook until the water from the mushrooms dries out.
Add salt, pepper, and Schezwan sauce until well combined.
Add rice and spring onion greens and gently toss the fried rice.
Turn off the flame.
Transfer the fried rice to a serving platter and serve hot.
To garnish, heat a tadka pan with a few drops of oil on medium flame.
Add garlic cut lengthwise and fry until golden brown.
Drain on an absorbent paper and garnish the fried rice with fried garlic chips.
