Preheat oven to 400°F.
Combine self-rising flour, soft cheese (such as gvina levana), grated hard cheese (such as kashkaval), crumbled brinza cheese, egg, and melted butter in a bowl.
Mix well to form a soft dough. If the dough is too wet to shape, add a little more flour.
Divide the dough into 30 small balls, about the size of apricots.
Dip the top of each ball into the grated topping cheese.
Place the cheese-topped dough balls on a parchment-lined baking sheet.
Bake until golden brown, approximately 20 minutes.
Serve warm.
