washed and sliced

Lager beer
Preheat oven to 180°C (350°F).
Cut beef into 3cm cubes.
Wash and slice the leek.
Mince the garlic.
Slice the bacon.
Slice the mushrooms.
Cube the potatoes.
Fry beef in batches until browned and set aside.
Add a little oil to the pan and fry leek, bacon, mushrooms, and garlic for about 5 minutes until softened.
Return the beef to the pan with flour.
Cook for 1 minute.
Add potatoes, thyme, and bay leaves.
Stir in beer and stock.
Pour into a large casserole dish, cover, and bake for 2 hours.
Remove thyme and bay leaves before serving.
Serve hot with crusty bread.
