Prepare dough by mixing flour, oil, water, vinegar, and salt.
Divide the dough into 6 equal portions.
Let the dough rest in the fridge while preparing the filling and custard.
Crumble or mash the cheese with a fork and mix with eggs until homogeneous.
Roll out each dough portion into a thin sheet, dusting with flour to prevent sticking.
Brush each sheet with melted butter and evenly spread the cheese filling.
Roll each sheet up tightly, like a cigar.
Form a large spiral out of the dough rolls in a buttered baking dish, attaching the end of one roll to the beginning of the next, creating a rose shape.
Mix sparkling water and eggs to make the custard.
Pour the custard over the Banitza.
Bake at 180C (350F) until golden brown and the custard and filling have set.
Let cool slightly before serving.
