In a mixing bowl, combine gram flour, rice flour, turmeric powder, red chili powder, asafoetida, curry leaves, and salt.
Add water gradually to form a thick batter.
Dip each bitter gourd slice into the batter, ensuring it is fully coated.

Drizzle with heated sunflower oil.
Bake for 18-20 minutes, or until golden brown, flipping halfway through.
