Toast 3 tablespoons of sesame seeds, almonds, and sunflower seeds in a dry pan until lightly toasted.
Remove the toasted seeds and nuts from the pan and let them cool in a bowl.
Toast the additional 1 tablespoon of sesame seeds separately until lightly toasted and let them cool on a separate plate.
Toast coriander, anise, fennel, and cumin in the pan until fragrant.
Remove the toasted spices from the pan and let them cool in another bowl.
Once the seeds and spices are completely cooled, combine all ingredients except the reserved 1 tablespoon of sesame seeds, thyme, sumac, and salt in a spice grinder, coffee grinder, or food processor.
Grind the mixture until it is halfway powdery.
Add the sea salt, thyme, and sumac to the grinder and pulse briefly to blend.
Add the reserved 1 tablespoon of whole sesame seeds and blend with a wire whisk to combine.
Store the Za'atar spice blend in an airtight container.
