Lay 3-4 jalapeno slices on a won ton wrapper.
Add cheddar piece and roll up, repeating for 2 more wrappers.
For string cheese jalapeno bites, cut string cheese into 3 pieces.
Add jalapeno slices to a won ton wrapper.
Add string cheese piece and roll up, repeating for 2 more wrappers.
Heat canola oil in a medium skillet (about 1/2 inch deep) over medium heat.
Fry 4-5 won tons at a time until golden brown on each side, adjusting heat if needed.
Remove and drain on a paper towel.
