Preheat broiler.
Microwave cream cheese spread in medium microwaveable bowl on HIGH for 10 seconds to soften.
In the bowl with the cream cheese, add 5 eggs and whisk until well blended.
Heat oil in a large ovenproof skillet over medium heat.
Add the chopped red pepper, zucchini, and onion to the skillet.
Cook and stir the vegetables for about 3 minutes, or until they are crisp-tender.
Stir the cream cheese and egg mixture into the skillet with the cooked vegetables. Top with 1/4 cup of crumbled feta cheese.
Cook the frittata in the skillet for about 5 minutes, or until the center is almost set.
Crack the remaining egg onto the top of the frittata.
Sprinkle the remaining 1/4 cup feta cheese and the chopped fresh thyme over the top of the frittata.
Place the skillet under the broiler, positioned about 4 inches from the heat source.
Broil for 4 to 5 minutes, or until the egg white is set and the yolk is cooked to your desired doneness.
