Preheat oven to 325F and coat a baking sheet with olive oil cooking spray.
Melt butter in a large saucepan over medium-high heat.
Add chopped onion and grated carrot to the saucepan.
Cook for 3-5 minutes, or until the onion is lightly browned.
Remove the saucepan from the heat and set aside.
In a large bowl, mash the drained and rinsed black beans.
In a medium bowl, mix glucomannan and water to thicken.
Add the glucomannan mixture to the mashed beans.
Add ground turkey, eggs, onion/carrot mix, Wasabi powder, black pepper, and sea salt to the bowl with the beans.
Mix all ingredients well until thoroughly combined.
Form the mixture into 18 patties, approximately 1/2 inch thick and 3 inches in diameter.
Place the formed patties on the prepared baking sheet.
Bake for 45 minutes, or until a thermometer inserted in the center of a patty registers 165F and the meat is no longer pink.
Extra patties can be frozen raw or cooked for later use.
