Add 1 cup of water, stir, and bring to a boil.
Turn down the heat and let the curry stew for 15 minutes until the chicken and carrots are done.
Check seasonings and adjust to taste.
Turn off the heat and transfer the curry to a serving bowl.
Serve hot.
