Combine flour, salt, and oil in a bowl.
Gradually add water and knead into a firm, smooth dough.
Coat the dough with oil, cover, and let rest for 15 minutes.
Divide the dough into 8 portions.
Preheat a tawa or skillet on medium heat.
Roll each portion into a ball and flatten.
Roll into circles of approximately 3 inches in diameter.
Spread 1/4 teaspoon of oil on the rolled dough.
Fold into a semi-circle, then fold again into a triangle.
Roll the triangle gently into a larger triangle.
Place the paratha on the hot tawa.
Flip when air pockets start to form.
Smear 1/2 teaspoon of ghee on the flipped side.
Press and turn with a spatula until golden brown spots appear.
Flip and repeat on the other side.
Remove from heat and serve hot.
