sweet potatoes

Peel the sweet potato and chop into 2 cm slices.
Boil the sweet potato slices in a pot of water until soft.
Drain the water from the boiled sweet potatoes.
Mash the sweet potatoes in a bowl.
Add the margarine to the mashed sweet potatoes while they are still hot and mix well.
Beat the egg and add 3/4 of it to the sweet potato mixture along with the sugar, mix well.
Add honey, cream powder, and cinnamon to the sweet potato mixture and mix well.
Preheat oven to 180C/350F.
Prepare muffin cups.
Pour the batter into the prepared muffin cups.
Brush the top of each cupcake with the remainder of the beaten egg.
Bake in the preheated oven for 15 minutes.
Remove the baked cupcakes and place them on a cooling rack to cool.
