Chop the cherry tomatoes into small cubes.
Heat a bit of olive oil in a pan over medium heat.
Fry the spinach until wilted.
Add the chopped cherry tomatoes to the pan with the spinach.
Mix the two eggs together in a bowl with two pinches of skimmed milk.
Whisk the egg and milk mixture together.
Pour the egg mixture into the pan, over the spinach and tomatoes.
Let the omelette cook for a minute to set.
Sprinkle the grated cheese on top of the omelette.
Tear the salami/Cervelat into small pieces and place on top of the omelette.
Season the omelette with a bit of pepper.
Flip the omelette when the bottom is cooked and set.
Cook the other side until golden brown.
Serve on a plate and enjoy!
