Bake for 45-55 minutes, or until the pudding is slightly puffy and golden on top. The surface will crack.
Remove from oven and let it cool slightly. It will sink a little.
Sprinkle the cinnamon-sugar mixture over the top.
Serve warm or lukewarm, with custard, ice cream, fruit syrups, or maple syrup.
