Preheat the oven to 180C (350F).
Pour the balsamic vinegar into a small pan.
Reduce the balsamic vinegar over medium heat until slightly thickened.
Cut a small cross on the top of each fig.
Place the figs in an ovenproof dish.
Place a small piece of butter into the top of each fig.
If using sage, push a little bit of chopped sage into the figs.
Sprinkle dark brown sugar over the figs.
Pour a little of the reduced balsamic vinegar over each fig.
Place the dish in the preheated oven.
Roast for approximately 30 minutes, or until the figs are softened and caramelized.
Serve warm with a generous dollop of ice cream.
