Wash 1 cup of quinoa and soak for two hours.
Heat ghee in a pressure cooker.
Add finely chopped garlic and onions and sauté until the onions soften.
Stir in the green chilli, quinoa, cinnamon stick, cloves, and cardamom.
Add salt to taste and toss on high heat for two minutes.
Add two cups of water and pressure cook for two whistles.
Reduce heat to low and simmer for 15 minutes.
Turn off the heat and allow the pressure to release naturally.
Open the pressure cooker and fluff the quinoa with a spoon.
Add finely chopped mint leaves and combine well.
Serve the Pudina Quinoa hot.
