Stir in red lentils and bring to a boil.
Reduce heat to medium-low, cover, and cook for 15 minutes, stirring occasionally.
Add coarsely chopped basil and simmer covered for 15 minutes.
Season with extra salt and pepper to taste.
Serve stew in individual bowls and float 1 tablespoon of dry sherry on top of each bowl.
Garnish with remaining basil leaves and serve hot.
