Combine pork butt, water, chicken bouillon powder, diced tomatoes or tomato paste, garlic cloves, jalapenos, and oregano in a stockpot.
Simmer until pork is fork tender, approximately 3-4 hours.
Alternatively, combine pork butt, water (reduced by 1/2), chicken bouillon powder (reduced by 1/3), diced tomatoes or tomato paste, garlic cloves, jalapenos, and oregano in a crock pot.
Cook on low for 8-10 hours, or until pork is fork tender.
Remove pork from heat and let cool in the broth until cool enough to handle.
Shred or pull the pork with forks or by hand.
Place shredded pork in a storage container and add some of the broth to moisten.
Refrigerate until needed.
Reheat in the microwave or in a saucepan, using a little juice to keep it moist.
For Mexican-flavored pot roast, slice the pork fairly thick (about 1/2 inch).
