Preheat your broiler.

Add olive oil and butter to the same skillet.

Whisk in the chicken stock, ensuring no lumps form.
Stir in the heavy cream.
Bring the sauce to a simmer and then add 1 1/2 cups of shredded mozzarella and 1/2 cup of Italian shredded cheese blend (or grated Parmesan).
Stir until the cheese is melted and the sauce is smooth.
Add the Italian diced tomatoes (with garlic, basil, and oregano), salt, pepper, and hot sauce (Tabasco) to the sauce.
Return the browned sausage to the sauce.
Stir to combine.
Pour the cooked pasta into a casserole dish.
Pour the sauce evenly over the pasta.
Stir to ensure the pasta is well coated.
Sprinkle extra mozzarella and Parmesan cheese on top.
Place the casserole under the preheated broiler for a few minutes, until the cheese is melted, bubbly, and lightly browned.
Remove from broiler and let cool slightly.
Serve immediately and enjoy!
