Sweet Cottage Cheese
Semolina
Flour
Sugar
Eggs
Vanilla Sugar
Cooking Oil
Cream
Jam
In a bowl, combine the sweet cottage cheese, semolina, 2 tablespoons of flour, sugar, and eggs (and vanilla sugar if desired). Mix well to form a dough.
On a lightly floured surface, place the dough.
Take portions of the dough and shape them into small balls, then flatten slightly and create a hole in the center to resemble a donut.
Shape the remaining dough into smaller balls to be placed on top of the donuts after frying; these should be slightly bigger than the donut hole.
Heat cooking oil in a deep pan or fryer to a temperature suitable for frying.
Carefully place the donut-shaped dough and the smaller balls into the hot oil. Ensure they are fully submerged.
Fry the papanasi until golden brown on all sides, flipping as needed. They should rise and become fluffy.
Remove the fried papanasi from the oil and place them on a plate lined with paper towels to drain excess oil.
Assemble each serving by placing a donut on a plate and topping it with a smaller fried ball.
Spoon cream generously over the top of each donut and add a spoonful of your favorite jam (such as wild cherry or wooden fruits jam).
Serve immediately and enjoy.
