Add eggs and apple cider vinegar.
Pulse until combined.
Very briefly pulse in walnuts.
Transfer batter to a mini loaf pan.
Bake at 350°F for 28-32 minutes.
Remove pan from oven and set it on a cooling rack.
Cool bread in pan for 2 hours before removing.
Serve!
