Prick sausage and simmer in water to remove excess fat.
Drain liquid from sausage.
Cut sausage into 1/2-inch pieces.
Sauté sausage in olive oil until lightly browned.
Add onions and peppers and cook until tender.
Remove sausage and vegetables from the pan.
Dry chicken and brown on all sides in the same pan.
Drain excess fat from the pan.
Add sausage, vegetables, and remaining ingredients (except shrimp, tomatoes, peas/beans, chickpeas, olives) to the pan.
Cover and simmer for 15 minutes.
Bring to a rapid boil.
Sprinkle in rice and mix into the liquid.
Boil rapidly for 5-6 minutes, uncovered, without stirring.
Push shrimp, tail end down, into the rice.
Strew tomatoes, peas/beans, chickpeas, and olives over the rice.
Do not stir; push ingredients into the rice.
Correct seasoning.
Reduce heat and simmer for 8-10 minutes, uncovered, until rice is tender.
If needed, cover briefly with a small amount of water/stock.
Serve paella from the pan.
Garnish with lemon quarters and parsley.
Cover and let sit for 5-10 minutes before serving.
