Preheat oven to 350°F (175°C).
Grease the bottom of a 9x11 inch baking dish.
In a medium skillet, brown ground beef and chopped onion over medium heat until the beef is cooked through and the onion is softened.
Stir in the refried beans, chopped green chili peppers, and one can of enchilada sauce into the beef mixture. Heat until warm and well combined.
Spoon 3-4 tablespoons of the meat mixture onto each flour tortilla.
Sprinkle each tortilla with cheddar cheese, reserving 6 oz for topping.
Fold the tortilla around the filling.
Place the filled and folded tortillas seam-side down in the prepared baking dish.
Repeat with the remaining meat mixture and tortillas until all are filled.
Pour the remaining can of enchilada sauce evenly over the enchiritos.
Sprinkle the remaining grated cheddar cheese over the top of the enchiritos.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the enchiritos are heated through.
